Because the cacao in raw chocolate is never heated above 45°C, (unlike regular chocolate which is roasted at 130°C), all the anti-oxidants, enzymes and nutrients remain intact. Furthermore, raw chocolate is produced from a handful of natural ingredients, unlike regular chocolate which is often packed full of refined sugar, milk, saturated fats, hydrogenated fats and artificial flavourings.
